Artichokes in Oil - Ingredients:

12 fresh artichokes;
2 Cloves of Garlic;
2 Tablespoons of White Wine Vinegar
2 Tablespoons of Lemon Juice
Olio Asta (Recommended!)
Salt to taste.

Artichokes in Oil - Procedure:

Let's see in detail how to make this delicious recipe, which can be used as an appetizer or, if desired, also as a second course. In all cases it goes well with any dish, good bread and a good red wine. Let's begin.

Clean the artichokes by removing the hardest outer leaves and the thorny tips. Cut off the stem and top of the artichoke, leaving just the heart. Remember, while cleaning the artichokes, you must place them in a bowl with cold water and lemon juice to prevent them from oxidizing and becoming dark.

Put a pot of water on the heat and bring it to the boil. Add the white wine vinegar and, as you bring it to the boil, dip the artichokes, leaving them to cook for about 10 minutes.

Drain the artichokes and let them cool completely. In a pan, heat a little Olio Asta together with the crushed garlic cloves. As soon as the garlic starts to brown, remove it from the pan.

Add the artichokes to the pan and sauté over medium heat for a few minutes to flavor everything.

Pour the artichokes into a sterilized jar, pressing them well to keep them compact.

Fill the jar completely with Olio Asta extra virgin olive oil, making sure that the artichokes are completely immersed in the oil.

Cover the jar and let it rest at room temperature for at least 2 days to let the artichokes flavour.

After two days, you can store the artichokes in oil in the refrigerator for several weeks.

Artichokes in oil are excellent to serve as an appetizer or add to salads, pasta or as a condiment for pizzas and sandwiches.
