Bresaola Carpaccio is a fresh and very simple dish to make. Here is the recipe:

Ingredients for Bresaola Carpaccio
- 200 g of bresaola;
- 200 g of cherry tomatoes;
- 100 g of arugula;
- 100 g of Parmigiano Reggiano DOP (in shavings);
- 4 tablespoons of high-quality extra virgin olive oil (Olio Asta);
- Salt and pepper to taste;
- Balsamic vinegar glaze;

Instructions
1. Prepare the arugula: Wash and chop coarsely, without chopping too much.

2. Prepare the cherry tomatoes: Wash and halve the cherry tomatoes.

3. Prepare the parmesan: Using a potato peeler, shave petals from the parmesan.

4.Compose the dish
- Place the bresaola on the bottom of the plate;
- Continue with a layer of arugula and cherry tomatoes;
- Drizzle with extra virgin olive oil, salt and pepper;
- Top with parmesan petals and balsamic vinegar glaze;
